Torrents on a headless PC - beginner questions

I want to move to a mini PC that sits in my rack for torrents, Plex, and HomeAssistant. This is mainly so I don't have to leave my gaming rig on 24/7 for Plex and Torrents.

Today, I browse my torrent site, click the torrent, download it, and then move (or unzip and move) the completed file into the right Plex folder, which includes creating said folder if necessary. I don't watch so many shows per week that I've bothered to ever set up all the automatic downloading and cataloguing and so on, but I know it's an option.

I know the capabilities are endless in terms of what can be done, but I would like some clarity on what the standard experience looks like with stuff running on a headless PC. As I understand it, if I get a PC using:

Windows - then I'd just TeamViewer in and repeat this process? I know I could also save the torrents I like the look of to Dropbox from my phone and have the PC polling that folder.

Something non-Windows - how does it work exactly at its most standard implentation?

I've never used a non-Windows OS, but I'm not completely tech illiterate and could learn.
