Poached Pickerel w/Peaches in Parchment

Don't follow the jasmine rice recipe. Water to rice is 1.25:1 for jasmine.
pickerel and walleye are interchangeable (the same fish) in my neck of the woods.

ready to wrap & bake (bbq @400F)

Peaches are in season this month, so it only tastes this great in August.
Same applies to the corn-on-the-cob that accompanied this dish.

I'd have rolled it in something edible, personally.
- I'll consider it for next August when the peaches reappear!
Peaches with fish is abomination. Just no. Rest can stay tough.
- What peach and fish combination have you sampled that caused you upset?
- I think this looks fantastic I make a halibut with mango salsa often in the summer and I think I’ll try it with peach salsa next.
  
  ngl, it's deadly....mango obviously works with this, too. I'd kill for fresh halibut.
