Seeking Guidance: GMKtec Nucbox G2 or G3 for a Home Server/Home Lab?

I find myself at a crossroads between two options: the GMKtec Nucbox G2 and G3, both currently available at discounted rates on Amazon. This marks my inaugural venture into the realm of home servers and labs, and I'm seeking guidance from the experienced minds here.
My primary goal is to tinker with Dockers, explore intriguing projects, immerse myself in Proxmox, set up Pi-hole, and generally experiment with various home server applications. While I'm new to this landscape, I'm determined to make an informed decision.
Just to clarify, I don't intend to use the mini PC for Plex or gaming, as I've already got a pretty robust gaming rig for those purposes.
Another query that's on my mind: should I consider upgrading the RAM from the standard configuration to 16GB or 32GB? Or is that premature at this stage? Moreover, will a 512GB storage suffice for my needs?
