Damn that looks good. I went vegetarian about 4 years ago and, while I have no regrets, I do miss pulled pork...like, a lot. I'm totally gonna enjoy those sandwiches vicariously through you lol.
Look into jackfruit "pulled pork"! I've tried one and it's pretty good. A bit sweet but good.
