Cloudflare DNS (1.1.1.1) is marginally faster than Google DNS (8.8.8.8) by milliseconds. If you actually value your privacy, use QuadNine (9.9.9.9) or Adguard DNS (94.140.14.14 and 94.140.15.15). Or just host your own with PiHole
4Cloudflare is going to know that your Switch is connecting to any of these shops anyways since they are all behind Cloudflare, but I originally used Quad9 when Google DNS was giving me issues.
Really the main issue is people using their ISP's DNS and having issues. There were a few users with Verizon and Middle Eastern ISPs that could connect to the main Tinfoil shop domain but any metadata icons/file downloads would fail with curl error 6 (Couldn't resolve host).
