Google Docs would be Pages, Google Sheets would be Numbers (and there's Keynote for presentations). Or Microsoft's office suite for example.
Not sure if there's a list specifically addressing what you're looking for, but alternativeto.net probably lists alternatives for all Google apps.

8I have a drive replacement and Email but I’d say docs is what I use most and what I’d like to switch to a non google app
1There is Microsoft's suite available on mobile, and there is also onlyoffice, which is FOSS
1There's Microsoft Office as I said, or Apple's office apps Pages, Numbers and Keynote. Both suites integrate with their respective cloud drives (OneDrive/iCloud Drive), Apple's suite is entirely free/included with your device.
MobiSystems "OfficeSuite" also exists, and then there are tons of smaller apps.

Collabora office is what I use. I do not think it has a cloud backup though.
4For offline only you can use the collabora office app or for online I recommend cryptpad, it is in a browser with no app, but it works.
