  • @dynomight@lemmy.world If you do run an experiment like this again, I'd recommend using a continuous glucose monitor (CGM). While they used to be prescription-only in the US, you can now buy the Dexcom Stelo or Abbott Lingo over the counter. Average blood glucose is not going to tell you much - more interesting is the blood glucose spikes after a meal and how quickly you return to baseline.

    Did you have a look at Chris van Tulleken's book Ultra-Processed People before the experiment?
