I believe that's something only admins can set for the entire instance.
10Thing is when I look at the comment from duck duck go I can see the curse word, but if I'm on the web app or on connect it's replaced with removed, can admins actually change comments based on what instance I view them from?
1You're on Lemmy.ml which censors profanity. If you want to stop it, you gotta move to a different instance.
If I understand correctly on how the censor system works:
If you post something to a community on a censored instance, it'll be censored for everyone.
If you view a non-censored post on a censored instance, it'll only be censored for you.

The instance you’re on censors slurs. Mainly the b-word (misogynist term for women), but also the n-word (racial slur), various other lesser used racial slurs.
It does not censor general profanity like fuck, ass, shit.
Your only option is to open an account on another instance that doesn’t have as strict of a filter. Lemmy world for instance.
All content even from other instances is subject to this filter because it goes through your instance to get to you via federation.
