When we dissected eyeballs in highschool they were surprisingly firm. I'd bet on it bouncing.

I've only handled a cow eyeball and it would most probably bounce. Those things are way harder than you would expect.

We were eating one time and just looks at his fork and says "what would happen if you put a fork in your eye?"

You could see it with the remaining eye.

- Well, the human eye ruptures at around 50 PSI. I'll spare you the math, but if you can throw it at a wall so it hits over 45 mph, it'll splat. Otherwise, it'll bounce.
