WITT
  • Looks like the gas-in stub that comes off the other end of the gas tap inside the keg. I was using Cornelius style kegs though, and one end of the tubes was always flared for the o-ring to seat in.

What's your go to site/cookbook for Mexican food?
  • Rick Baylis’s books are a solid start. I think he has a website as well.

Masienda (masa and associated products) should have some recipes too.

  • Thanks for the reminder, the markdown on mobile caches me sideways if I’m not paying attention (which is more often than not)

  • I’ve personally never seen it. It looks pretty interesting from the overview. At first glance, it seems there is a very plausible argument for it being considered sci-fi. I feel like there might be a 12 Monkeys sort of vibe to it. Nice suggestion, thanks!

What is your favorite thing to pickle?
  • Naturally, I didn’t take notes when I made them. I’m pretty sure I stayed mostly in the mulling spices range: allspice, black peppercorns, clove, cardamom. I’m pretty sure I put in a few coriander and mustard seeds too. Could always add in some cinnamon or nutmeg/mace. Also pretty sure I used plain distilled white vinegar, but I bet apple cider vinegar would be an interesting variation.

They made a nice accompaniment to charcuterie and even ice cream.

What is your favorite thing to pickle?
  • Meyer lemons, cherries, blueberries, shallots, garlic, eggs, okra, green beans, watermelon.

I hear pickled pigs feet are tasty, but I have yet to try them.

  • Looks great so far, thanks for the awesome work! One issue I have bumped into is not being able to log into blahaj.zone. It keeps giving an unable to connect error. I can log in to their instance just fine via browser though.

Back to school thread - feel free to share anything about this specific time of the year!
  • There’s a lot of growing up to do in the jump from pre-k to kindergarten. Plus, new school and no preexisting friends. It’s been a wild ride. A little extra support for our young ones can go a long way.
