So you don't really use "fresh" vanilla. It's actually quite nasty in terms of it's sap, which results in a very painful rash.
It takes about 9 months from pollination to maturity. These pods I polimated in January or maybe even December last year. After about 9 months in the vine, they need to cure. So that means blanching the beans, then a several month slow dehydration to their final state. They do smell faintly of vanilla and I do sell vanilla, but these won't be ready for months. Once curred they're basically shelf stable for years and years.
