What's your favourite meat that isn't chicken, beef, pork, or lamb?

A nice roasted duck gets my mouth leaking like an old galvanized pipe that you didn't realize was rotting from the inside out

Maybe an unpopular one... but while I was in Iceland I had foal. You can get it at any grocery market there. It's without question the best meat I've ever had.

Tofu is tried and true and super versatile.
Learning to cook seitan feels like a veritable lifehack the first time you experience turning 2 cups of gluten powder into a massive bounty of sandwich slices.
Things like Beyond (ideally their avocado-oil versions) are a bit too pricy, but a nice change of pace when they go on sale. They're good for those random burger cravings. Same story with those breaded Gardein patties.
Soy curls are a miracle.
- I added tofu to my rotating protein list and it’s been a great addition. I regret not eating it sooner.

The salmon seasons on the US West coast have been essentially non-existent for a couple of years. The Abalone season has been suspended for over 5 years. Both of those meats are absolutely amazing, especially when you prepare and eat them the day you caught them. I miss those two the most.

Crab. Always looked forward to the few days a month my family have crab.
- Caught a few but my partner is disgusted at the idea of eating them. Shame as it was really easy.

Salmon. It might actually be my favourite overall. Delicious.

Tofu
- That's not meat.
  It's okay if you don't eat meat, and it's okay to just say that; I'm just more annoyed at the whole trend of "meat substitutes" when you can just... not eat meat.
  Tofu is an awesome ingredient, used in an incredible variety of dishes. To reduce it to something it isn't trying to be is such a waste of a good ingredient.
  
  There's nothing wrong with meat substitutes. Vegans don't take issue with the taste and textures of foods, we take issue with where those foods come from and how they're acquired. Mock meats are a great way to help people ease their transition into a better lifestyle until get more accustomed to more plant-forward meals, as well as being a panacea for people who have food sensitivity issues.
  
  I know all the ways tofu can be used. But it is a great meat substitute as well and what is wrong with that? I don’t understand the hate against meat substitutes. Especially when it’s not one of those ultra processed foods, which tofu clearly isn’t.
  Yes there are A LOT of great meals without any meat-like ingredients but sometimes it’s just a nice addition. I like to make vegan Paella with smoked tofu cubes for example or bolognese with crumbled tofu. It’s all a substitute.
  
  I eat meat and I eat tofu. It’s great having a revolving list of protein to choose from.

I like duck if it's done properly, but eat kangaroo more often.
- Kangaroo has to be done right. A good kangaroo roast can be better than lamb or pork.

Quail is pretty good.

As a 10 year vegan, the meats I miss the most are gator tail and venison

  I had gator recently that was a plain fillet and not a fried nugget or something like that. I thought it was like a cross between chicken and a meaty fish. It tasted like chicken, but there was a slight sponginess and the way it pulled apart reminded me of fish
  
  It's been so long that my description might not be reliable, but I remember it as a slightly fishy, gamey chicken, but much softer and juicier than other game meats
  Gardein's "ultimate" plant based chick'n nuggets already taste kind of fishy IMO, and I've found that soaking them in dill pickle juice before cooking makes them taste a lot like I remember gator tail being like

On poultry, I'd go turkey over duck. Not keen on goose, too fatty.
- I don't think I've ever had "good" turkey so I would put it at the bottom of my poultry, goose is definitely fatty but I consider it like the wagyu of poultry. Duck is in the middle but still more decadent than chicken. Squab is near the top as well.

Horse! It's actually probably just my favourite meat in general even including the others
- I imagine horse is a lot like beef as Tesco got away with using horse meat in ready meals for who knows how long.

Probably venison and/or wild boar (if you don’t count the latter as pork). My partner’s parents are hunters and they’ve given us some excellent boar steaks and self made game sausages before.
- Venison is great but the markup is insane. In Scotland deer are hunted to stop them from destroying entire forests and the meat is sold to restaurants at a loss just so that it's used for something. Then those restaurants inflate the price massively because it's "exotic"
  
  It’s not as bad here in Germany but knowing hunters does pay off.

Duck is amazing, either Chinese style (Peking Duck) or French style (Canard à l'orange)
- I have had delicious roasted duck with wild blackberry sauce that was also delicious. To answer OP, that, venison, quail have been mentioned here and are delicious. I'm also fond of tiramisu and coffee.

- Stringy, sinewy, tough, but good at absorbing whatever sauce you put on it
  
  Got to thinking, it's kinda like shrimp, but taste kinda like chicken. It's been like 15 years.
