A great one from Another Crab's Treasure:
"I'm not-...!! I...I am getting angry, aren't I? I think, maybe, I've been angry the whole time. Ever since I left the tide pool. I never wanted to be. Everyone else seems angry all the time. I didn't want to be like that. But I can't help it! Not when people like you always get everything you want, and other people get hurt for it! It's not fair! And I'm really strong now, strong enough to stop you from making things worse!...I think I get what Chitan meant now. If I'm gonna be angry, I might as well use it for something good! So that maybe, one day, other people won't have to fight like me! And what better way to start than to beat up a SELFISH...GREEDY...MUSSEL SHUCKER LIKE YOU!!"

"Do you shoot at birds?"
Dare anyone to pinpoint that quote.
"Snake? Snake? Snaaaaaaaaaaaaake!"
Ah shit here we go again.
Since so many other quotes are already claimed, how about some Outer Wilds:

"Were it so easy." - the Arbiter, Halo 3
Problem: Seems like the point of this game is victory. The absence of defeat on all fronts. Victory in business ventures and creative undertakings. Victory in love and over other people. Political victory. Ideological victory. Hell, even sexual victory. Definitely a lot of object-based victories, too - having things and not losing them. One problem, though: not a lot of victors in sight. Everyone’s mostly losing. Why is that? And how do you not lose?
Solution: How not to lose? It is impossible not to. The world is balanced on the edge of a knife. It’s a game of frayed nerves. You’re pushed on by numbers and punitive measures: pain, rejection, and unpaid bills. You can either play or you can crawl under a boat and waste away - turn into salt or a flock of seagulls. Your enemies would love that. Or you can fight. The only way to load the dice is to keep on fighting.

And remember, bad times are just times that are bad.
I don't remember the exact line, but in Metal Gear Rising: Revengence they say something to the effect of "Just like the WMDs and Iraq!" Referring to how the US used a lie as a false pretext for invasion. It was just so straightforward and direct. Even today that would still be crazy, but that game has been out for a while. Pretty bold to put it in.
I recently replayed Metal Gear Rising, and when Armstrong kept talking about how much of a pussy America has become and started yelling that with him at the helm, he'd MAKE AMERICA GREAT AGAIN, I was fucking shocked.
Granted, I know that term was an old Reagan term, but fuck, with Metal Gear Solid 2 (2001) being all about the internet flooding with misinformation and AI making it so that you don't truly know who you're talking with... And with Rising (2013) being about a dude thinking America is too woke and wanting to make it great again... AND WITH DEATH STRANDING (2019) being all about everyone being locked inside their homes, isolated with little physical connection to their friends and families, only waiting for the mailman to arrive with packages...
Whew, if I had to point out a person I suspect may have a functioning time machine, Kojima might be it..

That's 11 years old... The fuck what the... But... Fuck...
Hello, my name is Dr. Glenn Pierce, and by now you may have realized that all of this has happened exactly the way it was supposed to. You see, everyone who comes to the institute does so because they feel they are no longer in control of something important to them. But, more often than not, the problem is not that the problems we face can't be solved; the problem is that we become so afraid of failure that we refuse to see our problems from a new perspective -- and so we do the same things again, and again, and again. And therein of course, we find exactly the failure we were looking for.
Your life will always be a struggle, and you will always have problems. But today, you had the chance to see things differently. Even though it meant facing obstacles that seemed impossible at first, you thought outside the box - and you overcame them. Because you saw things from every angle, you understood them for what they really were. Because you kept moving forward, no matter how far off the path you were told you were headed, or how unexpected it became...you found your way.
In a few minutes, you'll be back in the real world, and some part of you will say that none of this was real: So how could it have meant anything? But -- just like the power of perspective itself -- it will have been as real as you believed it to be. All you've got to do is... wake... up.

Alright, I've been thinking. When life gives you lemons, don't make lemonade - make life take the lemons back! Get mad! I don't want your damn lemons, what am I supposed to do with these? Demand to see life's manager. Make life rue the day it thought it could give Cave Johnson lemons. Do you know who I am? I'm the man who's gonna burn your house down! With the lemons. I'm going to to get my engineers to invent a combustible lemon that burns your house down!
I wonder ehat Cave Johnson would make of Slug from Atmosphere's line "When life hands you lemons you paint that shit gold".
"death will not save you from me"-diablo
"Stay a while and listen."
There's no shame in it, Raziel - revenge is motivation enough. At least it's honest. Hate me, but do it honestly.
This always stuck with me. From Braid. Particularly the bonded paragraphs. I added the whole section for completeness.
Tim is off on a search to rescue the Princess. She has been snatched by a horrible and evil monster. This happened because Tim made a mistake.
Not just one. He made many mistakes during the time they spent together, all those years ago. Memories of their relationship have become muddled, replaced wholesale, but one remains clear: the princess turning sharply away, her braid lashing at him with contempt.
He knows she tried to be forgiving, but who can just shrug away a guilty lie, a stab in the back? Such a mistake will change a relationship irreversibly, even if we have learned from the mistake and would never repeat it. The princess's eyes grew narrower. She became more distant.
Our world, with its rules of causality, has trained us to be miserly with forgiveness. By forgiving too readily, we can be badly hurt. But if we've learned from a mistake and become better for it, shouldn't we be rewarded for the learning, rather than punished for the mistake?
What if our world worked differently? Suppose we could tell her: 'I didn't mean what I just said,' and she would say: 'It's okay, I understand,' and she would not turn away, and life would really proceed as though we had never said that thing? We could remove the damage but still be wiser for the experience.
Tim and the Princess lounge in the castle garden, laughing together, giving names to the colorful birds. Their mistakes are hidden from each other, tucked away between the folds of time, safe.
"I don't think I can forgive you for that."
"...but I'd like to try."
"Well, This is the part where he kills us."
"Hello. This is the part where I kill you."

It's a-me, Mario!
From Assassin's Creed 2. Might be known from some other game too, I dunno.
Your uncle!
Everything that lives is designed to end. We are perpetually trapped... in a never-ending spiral of life and death. Is it a curse? Or some kind of punishment? I often think about the god who blessed us with this cryptic puzzle... and wonder if we'll have the chance to kill him.
"Nah" -System Shock 2

I don't know if its my favorite, but man it hits hard hearing that.
"(while looking into the mirror) Despite everything, it's still you.", from Undertale.
Also a bunch of lines from the Happy Happy cult members in Earthbound.
"What kind of idiot are you?"
"I dunno. The good kind?"
Bulletstorm.
"Here come the test results: 'You are a horrible person'. That's what it says, 'a horrible person'. We weren't even testing for that!"
“Oh, It’s you.”
Never thought a robot could throw so much shade with just three words.
Portal was my first thought too!

Anything Glados from Portal 1/2--still one of very, very few games to actually make me laugh. But also the Cave Johnson "when life gives you lemons" rant comes to mind, because it's both funny and poignant.
You might also enjoy The Stanley Parable, it's a very similar kind of humor, I recommend going in blind, as the game is a lot about exploring watching a funny dialogue in a video removes the fun out of it being a reaction to something you did.
Everything in Portal 2 is gold, but if you shout out both GladOs AND Cave, I feel like Wheatley deserves a mention as well.
"Most test subjects do experience some cognitive deterioration after a few months in suspension. Now you've been under for... quite a lot longer, and it's not out of the question that you might have a very minor case of serious brain damage. But don't be alarmed, alright? Although, if you do feel alarm, try to hold onto that feeling because that is the proper reaction to being told you have brain damage."
Yes, I honestly can't believe I didn't mention him. It's really a testament to what a fucking gem that game is. God. So much greatness packed into such a short time.
Favorite Glados ones:
And Cave Johnson:
Had to look it up to refresh my memory:
You really need the full 2-minute audio of the lemons bit to get the gist. J.K. Simmons did an amazing job balancing funny and, "oh shit, am I...sad!?!?...during the silly, funny puzzle game!?"
Had to be me, someone else might've gotten it wrong.
Oof, didn't expect it right in my heart reading these quotes
War... war never changes.
War has changed. It's no longer about nations, ideologies or ethnicity. It's an endless series of proxy battles, fought by mercenaries and machines. War - and its consumption of life - has become a well-oiled machine.
There's a reason I've started this game about 100 times.

"How are you gentlemen?"

When Picasso became bored of painting people, he started representing them as cubes and other abstract forms. The world called him a genius! I've spent my entire surgical career creating the same tired shapes, over and over again: the upturned nose, the cleft chin, the ample bosom. Wouldn't it be wonderful if I could do with a knife what that old spaniard did with a brush?
Spoilers for the Valhalla DLC of God of War: Ragnarok:
What can I say to you? I remember how it felt to take that throne. All that it meant and all that it did not. A God of war. God of pain, of suffering, of destruction. The Norns said I chase redemption that I know I can never deserve. What does that make me? God of fools. A God of... Hope. "When all else is lost". You lost everything. And everyone. you became... There is no forgiving you. You chose... I chose. What now? Should I, the same man, should I sit? take? proclaim? lead? place myself in service? In service. Should I lose everything and everyone, there's to be enough left inside so that I do not become you? I do not know. But I have... hope. You are cruel and arrogant and selfish. But you are more than that. You have always been more than what others saw. You are more than that.
It hits much harder with the voice acting: https://youtu.be/N7grmI3Bn0k
"The thing about happiness is that you only know you had it when it's gone. I mean, you may think to yourself that you're happy. But you don't really believe it. I wish there had been a way for Kellog to be more than just "a guy you kill on the way to the institute".
He deserved to be more fleshed out and used.

On the mention of age of empires:

Lots of good bioshock quotes, but the standout:
We all make choices, but in the end our choices make us
"But i gave my cat to you. Doesnt that make you the owner?"
Its said by a ghost cat to a cat. The owner in the context is the reason why the alive cat is locked in a series of rooms. I have spent months trying to understand what it means and still cant
0.000% of Communism has been built. Evil child-murdering billionaires still rule the world with a shit-eating grin. All he has managed to do is make himself sad. He is starting to suspect Kras Mazov fucked him over personally with his socio-economic theory. It has, however, made him into a very, very smart boy with something like a university degree in Truth. Instead of building Communism, he now builds a precise model of this grotesque, duplicitous world.
There's so many hard hitting quotes in this game. The one that hit me the hardest was actually the thought cabinet thought you get for trying to open the unopenable door.
Edit:
Found it.
"There is no way to open the supply depot door. Accept it. You cannot open all the doors. You have to integrate this into your character. Some doors will forever remain closed. Even if every single other door will open at one time or another, maybe to a key, or maybe to some sort of tool meant for opening doors... But this one will never accede to such commands. A realization crucial to personal growth. Crucial."
I felt so betrayed by this. I had spent a point to unlock this thought. I waited with excitement for its completion, which would surely allow me to unlock the door. But instead, I felt more called out than I have ever felt in my life.
Oh, I remember that one and that is an excellent choice. "You have to integrate this into your character" felt like the most violent thing a game has ever done to me.
You must be so exhausted

I bought FC3 without knowing what the game was because of this monologue:
Vaas: "Did I ever tell you what the definition of insanity is?
Insanity is doing the exact same fucking thing, over and over again expecting shit to change. That. Is. Crazy.
The first time somebody told me that, I dunno, I thought they were bullshitting me, so, boom, I shot him. The thing is, he was right
And then I started seeing, everywhere I looked, everywhere I looked all these fucking pricks. Everywhere I looked, doing the exact same fucking thing... over and over and over and over again thinking: 'This time is gonna be different.' No, no, no please... 'This time is gonna be different.'
I'm sorry, I don't like... The way... you are looking at me,. Okay!? Do you have a fucking problem in your head, do you think I am bullshitting you, do you think I am lying? Fuck you! Okay? Fuck you!
It's okay, man. I'm gonna chill, hermano. I'm gonna chill -
The thing is... Alright, the thing is I killed you once already. And it's not like I am fucking crazy. It's okay... It's like water under the bridge
Did I ever tell you the definition... of insanity?
Most overrated villain ever.
Vaas was an awakening that made everyone realize what Far Cry villains needed to be. They took the idea and ran with it for the next three games.
I don't think I ever finished FC3, I agree he wasn't a big part of the game
Still one of the best written monologues

Overblown character with little substance who you literally only see like 3 times in the campaign, dies midway through, and isn't even the main villain.
